Chocolate Chip Oatmeal Cookies

  1 1/2 cups packed dark brown sugar
1 cup butter, softened
1 1/2 teaspoon Almond or vanilla extract
1 egg
cups quick-cooking oats
1 1/2 cups of flour
1 teaspoon baking soda
1 cup semisweet chocolate chips (6 oz)
1 cup chopped nuts (optional)

  1. Heat oven to 350°F. 
  2. In large bowl, stir brown sugar, butter until well blended. Stir in vanilla or Almond extract and egg until fluffy.  Blend in oats, flour, baking soda stir in chocolate chips (nuts optional)
  3. Onto ungreased cookie sheet or parchment paper, drop dough by rounded tablespoonfuls about 2 inches apart.
  4. Bake 10 to 12 minutes until golden brown. 
  5. Cool slightly; remove from cookie sheet to wire rack.
