Pot Roast

1 cup flour
1 teaspoon of black pepper
5-6 pounds of beef chuck roast
2 tablespoons of Virgin oil
1 large peeled and sliced onion
1 package of mushrooms
1 1/2cups ketchup
1 cup of beef broth (low sodium)
1 pouch of onion soup mix
2 tablespoons of red wine
1/2 teaspoons of garlic powder


Crock pot:

Add flour, pepper and olive oil add roast and cover over roast.  Add rest of ingredients cover and cook on high for 6 1/2 hours or low for 10 hours.

Gravy from Crock pot can be used for topping of Roast.



Spinoff Strawberry Crisp

Mixture

5 cups  fresh strawberries (Halved)
1/4  cup and 1 teaspoon granulated sugar
2 tablespoons cornstarch
1 tablespoon unsalted butter(cut into pieces)

Topping

3/4 cup of quick-cooking oats
1/3 cup firmly packed light or dark brown sugar
1/3 cup four
1/3 cup unsalted flour (soften)
1/3 cups pecans or walnuts (Optional)

Preheat oven 350

Prepare in a large bowl strawberries, sugar, cornstarch. mix together will and spoon mix into a 10inch cast-iron skillet, top with butter.

Make topping: In a another bowl add oats, brown sugar, flour, butter and pecan or nuts. Combine well until crumbly texture.  Sprinkle over the strawberry mixture.

Bake until top is lightly golden brown and notice it bubble.  Bake 30 minutes.

Let cool 10 minutes, serve alone or with ice cream or cream.

Makes about 5-6 servings





Easy Tiramisu

1 box or white Cake mix
1 vanilla instant pudding & Pie filling
4 1/2 teaspoons unsweetened cocoa powder
4 1/2 teaspoons instant espresso powder
1 1/2 cups of heavy whipping cream
1/2 cup confectioner sugar
1/2 cup sour cream

Preheat oven 350

Grease bottom of 13x9 inch baking dish and dust with flour.  Make cake mix according to package instructions and pour into baking dish.and bake as directed on package. After baked, cool for 1/2 hour.

Make pudding as directed.

Poke holes in warm cake with a round topped handle utensil, making sure to not poke through the both of the cake. Spread pudding over cake, sprinkle 2 teaspoons of cocoa and 2 teaspoons of expresso.


In a large bowl beat cream, confectioners sugar, and sour cream at high spread until peaks form and stiff. Spread evenly over cake.  Sprinkle remaining cocoa and espresso should be 2 teaspoons each. Cover and refrigerate for 3 hours.


Serves 8-10

Italian Corn Chowder

I package of frozen corn (15 ounce bag)
1 large yellow potato peel and chopped into bite size
1 cup washed and peeled onion
1 cup celery washed and chopped
2 1/2 teaspoons  minced garlic fresh
1 teaspoon parsley
1 teaspoon thyme
6 cups no sodium Chicken Broth
1/2 teaspoon  black pepper
1 teaspoon Parmesan cheese

Add ingredients to a 6 or larger Crock pot and mix well in pot
Cover and cook on low for 6 1/2 hours or at high for 3 1/2 hours

Before serving remove about 1/2 of corn ingredients and 1 cup of liquid and add to a blender or food processor and blend to pureed, and pour back into crock pot and blend well.

Serves 4-5
